Beef Short Rib Red Wine Instant Pot

Instant Pot short ribs are faster and easier than braising all day. I braise these Instant Pot short ribs in red wine, mushrooms, onion, celery, carrots, and herbs. If you prefer not to have any of the ingredients, feel free to leave them out. It's kind of risky when you cook them conventionally. You don't know what the result will be. However, the Instant Pot method makes them so tender they fall off the bone. It goes without saying that you should enjoy these Instant Pot short ribs braised in red wine with some creamy mashed potatoes. Be sure to check out my amazing and fast Instant Pot mashed potatoes as well. They're smooth and silky and so rich. The more butter the better! You're going to start making Instant Pot short ribs by hitting the sauté button and adding in olive oil once hot. Make sure your short ribs are seasoned generously with salt and pepper before browning each side of each rib for four minutes in the Instant Pot. I If you're making a lot of ribs, brown in batches so they can brown better and not overcrowd the pan. Once you brown your ribs, set them aside. Add in your onion and garlic to sauté for just a few minutes. Then, add in the carrots, celery, and mushrooms, all chopped roughly. Next, add in thyme, oregano, rosemary, and bay leaves as they sauté. Pour in the cup of red wine to deglaze the Instant Pot. Get all the brown from the bottom scraped off so you do not get a burn notice when you eventually cook the ribs using pressure. Simmer the red wine so the alcohol evaporates. Next, add in your remaining ingredients to create your sauce the Instant Pot short ribs will cook in. Make sure you turn the sauté off by hitting the cancel button. Put your Instant Pot top on and set it to sealing. You'll cook on manual high pressure for 45 minutes and do a full natural release. When your Instant Pot short ribs are done cooking and you have done the natural release, check to see if your sauce is thick enough for your liking. If the sauce isn't thick enough, remove your short ribs and add in the cornstarch and cold water to a small bowl. Mix these two together and then add in a little bit at a time until it is at the desired thickness. Season to taste with salt and pepper, put your short ribs back in the sauce, and enjoy!
